Dollar Ogratten Chips With Parmentier Ducks
Ingredients
Dollar Chips potato slices from McCain
4 duck boots
2 onions finely chopped
2 cloves garlic
2 tablespoons butter
180 ml red wine
Fresh chopped parsley (a handful )
300g grated cheese mixture (gouda kefalotyri regatto or whatever you prefer)
1 heavy cream 500 gr.
1 egg
100 ml milk
salt, pepper
white truffle oil
Preparation
For the Parmentier duck:
Remove the skin and bones from the duck's paws and chop into small pieces
In a large frying pan, over medium heat, melt the butter and sauté the spring onions for about 5-7 minutes (until golden brown & tender)
Add the garlic and sauté for another 30 seconds
Add the shredded duck meat and parsley and sauté for another 2 minutes
Pour in the red wine and simmer for about 5 minutes. Parmentier duck is ready
For the potatoes:
Preheat oven with air to 200°C
After buttering a baking pan or pyrex, line the base with Dollar Chips potatoes without leaving empty spots and spread a small amount of the cheese mixture, a little pepper & salt
Add the duck pieces you have already prepared in the next layer
Finish by spreading the rest of the potatoes and cheeses, a little salt and pepper
Beat the heavy cream with the egg and milk and pour over the baking pan
Bake in the preheated oven with air for 20-25 minutes (or as long as it takes to get a nice golden color)
Serve by spraying with white truffle oil to highlight its wonderful aroma and taste
