Maxi Chips With Chicken In Mole Sauce

Ingredients

Ingredients for 4 people

– 280g Maxi Chips potatoes

– 150g Chicken breast

– 75g Mole sauce

– 60g Onions

– 150 ml chicken stock

– 5g Coriander

Preparation

Bake the Maxi Chips potatoes for 3.15 minutes at 175º in a large amount of hot olive oil. Then drain them on paper towels and add a little salt.

Fry the chicken breast with the olive oil and add pepper and season with salt and pepper. Cover with a lid for 5 minutes on low heat.

Turn the chicken breast halfway through. Let the chicken cool slightly and tear the fillet into narrow strips with your fingers. Fry the chopped onion in the same frying pan, add the mole sauce and the broth. Let it boil for 2 minutes.

Serve the chicken with mole over the Maxi Chips potatoes and garnish it with a few coriander leaves on top.
